Spring returns to the earth, everything recovers, and it’s time again… to eat red bayberry. There is a bayberry garden near my home. Taking advantage of my free time on weekends, I go to eat some bayberry and pick some bayberry wine by the way.

We went earlier, and we didn’t see anyone else in the Yangmei Garden. It costs 10 yuan per person, and it is free to eat when you enter the venue, and 15 yuan per catty if you take it away. It is said that this bayberry garden covers an area of ​​15 mu, and almost every tree is covered with red and black bayberry. We took the fruit basket and plunged into the red bayberry garden, and began to eat and drink.

In fact, I dare not eat too much, mainly because I am afraid that there will be insect eggs on the red bayberry. After eating a little, I started to pick into the basket, and in a short while, I picked up four baskets, which was basically enough, and I went home.

The bayberry needs to be washed with clean water, and then soaked in salt water to soak out the bugs and dirt. Then put some flour in to absorb the dirt. Rinse it twice with clean water and you can eat it with confidence. I have to say that the bayberries in this bayberry garden taste really good, and they are also big, suitable for making wine.

On the same day, I started to prepare for making wine. The red bayberry cannot be kept for a long time, and it will start to deteriorate after a day. After washing the bayberry, the bayberry must be dried to remove the surface moisture. Put it in a ventilated place outside in the morning, and you can basically make wine at night.

I am ashamed to say that I have drank a lot of fruit wine, but I have never tried soaking it once. This time I happened to try it with red bayberry. After inquiring about the process, I plan to make a bottle with rice wine and a bottle without rice wine. The alcohol concentration of the latter is not high, and anyone can taste it.

After purchasing glass bottles, rock sugar, and a small pot of rice wine, I started my first journey of making bayberry wine that night. Before putting the bayberry into the glass bottle, it is best to wash it with high alcohol to remove moisture and unclean things. Put two layers of red bayberry into one layer of rock sugar, and finally pour rice wine into a small pot. The ratio is about “red bayberry: small pot of rice wine: rock sugar = 1:1:0.3”.

The first 10L glass bottle can soak 7-8 catties of bayberry, and the rest can be soaked in a small bottle without wine. More than ten catties of bayberry will be gone like this. I look forward to the taste of two bayberry wine in a few months .
