Lemons are citrus fruits. The fruit is often used in cooking for its decorative and medicinal properties. The ancient wandering poets called it the “Apple of Media,” and it was thus remembered that the fruit came from Asia. Lemon zest has a refreshing and pleasant taste, reminiscent of the sour taste of lemons. In fact, citric acid itself has no smell, but the citric acid in wine will make the taste of wine more lively, light, delicate and elegant.
White wines contain some highly aromatic aldehydes, such as citral, the aroma of lemons (both fruit and lemon in wine). When the wine is aged, the smell is closer to verbena, and it is citral that gives verbena its strong and lively lemon aroma.
The aroma of lemon is relatively delicate, and it is often omitted in wine tasting analysis. However, this aroma is present in most Sauvignons from France, Australia, California and New Zealand, which makes these wines give the impression of freshness.
In non-vintage champagne, lemon aromas are also present. Its freshness also lends itself to sweet wines, especially in Sauternes, where it harmonizes honey and tropical fruit aromas perfectly.
It is present in most fine Alsace white wines made from Riesling, and in some top botrytised botrytised wines with a hint of candied lemon.
